Among the traditional dishes of Tlaxcala are tlaxcales, or tortillas. To prepare tlaxcales the hard corn must first be ground in a metate. The ground corn is then mixed with water and ground piloncillo to create a homogeneous batter. The dough is then shaped into a triangle or circular shape and baked on a griddle or comal. The resulting tortillas can be eaten either hot or cold.
